Healthy Apple Cinnamon Muffins

Today is just a beautiful glorious day! It has put me a great mood. I love the crisp fall weather. It just makes me want to go outside for a run. As soon as I am done this post, I will be burning some calories. I am also happy as I am in the process of getting a whole new look for my blog. I can’t wait for you to see it. It should be any day now.

Last week we did one of our traditional fall activities. The kids were off from school so we went to a local farm for a hay ride and some apple and pumpkin picking. Some of my children’s friends went and it made it even more enjoyable for the kids. My daughter is almost eleven and she is at the age where she wants to bring a friend everywhere. It is not as much fun going someplace with just your younger brother. If she can bring a friend, everything is fine and dandy.

The kiddos were able to pick apples and pumpkins but the highlight of the day was getting soft serve apple ice cream and running through the spooky corn maize. Luckily I had some smart kids to direct me as I probably would have been stuck there by myself.

I brought home the apples and decided to make some healthy muffins. I gave most of them away as a house warming treat to our friends who just moved into our neighborhood. My family was not happy so I am making more today. I am looking forward to having a house that smells like apples and cinnamon again. These are great for a nutritious breakfast or snack. Enjoy!

Healthy Apple Cinnamon Muffins

1 1/2 cups white whole wheat flour
3/4 tsp baking soda
3/4 tsp baking powder
1/4 tsp salt
2 tsp cinnamon
1/4 cup canola oil
1/2 cup sugar
1 large egg, beaten
3/4 cup non fat plain yogurt
1/2 cup unsweetened applesauce
2 medium size apples, peeled, cored and chopped

Preheat oven to 350 degrees. Line 12 muffin tins with paper cupcake liners. In a medium size bowl, mix together the flour, baking soda, baking powder, salt and cinnamon. In a large bowl, beat together the oil, sugar, eggs, yogurt and applesauce. Stir the oil mixture into the flour mixture just until moistened. Lightly, mix in the apples. Spoon the batter into the lined muffin tins. Bake for 19 to 23 minutes or until muffins are golden and toothpick placed in center comes out clean. Cool before serving.

Exactly right! No oil, eggs, or water. Sounds weird works like a charm. I bet if you used spice cake mix like several other coenmmters suggested, you wouldn’t have to include the cinnamon and nutmeg. I’m going to try that version next time!

Fruit adds such a great texture and by the looks of those muffins I see why your family was mad you gave them all away. Can’t wait to see the new look I’m sure it’ll be amazing!

Your muffins contain two of my favorite ingredients, apples and cinnamon. They look so moist and delicious. Your children are beautiful, it’s wonderful to spend the day with them and their friends doing fall stuff…great memories for all!

These look especailly good. I don’t think I can find white whole wheat flour here. I wonder if regular whole wheat would work.

This is such a nice recipe for healthy fall muffins, Lisa. I'm a bit jealous of your outing to a local farm to pick your very own pumpkins and apples. Where I live, these can only be found at the store; the u-pick opportunities available to me are for oranges, tangerines, and the like.
