Fettuccine with Artichokes and Sun Dried Tomatoes

It’s another busy day so I am doing a really quick post. This past week my mother was visiting. I wanted to make a nice dinner the first night she was here so I went and purchased some homemade pasta. We have a wonderful Italian store nearby that sells fresh cut pasta as well as a variety of Italian meats and cheeses.

I decided to go with a quick, light easy meal. I also purchased some Pecorino Romano to shred on the pasta. It is a strong salty cheese made from sheep’s milk. It was the perfect cheese to go with the light sauce and vegetables. I love my crushed red pepper and also sprinkled some on my pasta. Frozen artichoke hearts were used, but canned hearts could be substituted. Feel free to substitute dried pasta for also. Happy weekend everyone!

Fettuccine with Artichokes and Sun Dried Tomatoes

1 1/2 lbs fresh fettuccine
2 TBS olive oil
3 cloves crushed garlic
12 oz package frozen artichoke hearts
1/2 cup chopped sun dried tomatoes (soft kind not in oil)
2 1/2 cups chicken broth
1 cup half and half
1/3 cup fresh chopped basil
fresh grated cheese
salt and pepper to taste

Cook the pasta according to store or package directions. In a large fry pan, heat the oil to medium high. Add the garlic, artichokes and sun dried tomatoes. Cook for a few minutes until vegetables soften. Add the broth and simmer on low for 5 minutes. Add half and half and basil and cook for a minute or two or until thickened. Add the cooked pasta and toss gently. Serve with fresh grated cheese and salt and pepper to taste.

Isn’t fresh pasta the best? This past sounds delicious, especially with the artichokes, those are my favorite.

I put crushed red pepper flakes on my pasta too! Gotta have a little bit of heat. Artichokes are a good idea too.

I love using fresh pasta. I don’t often cook woth artichokes but they are dlish so may well give this a go – love sun dried toms too
