I started rummaging through the pantry after putting the kids to bed the other night. I could not find much. We did have some single serving packaged kids snacks. Let’s see…teddy grahams, granola bars, pudding. Nothing seemed that appealing. Now on to the freezer. A little vanilla ice cream was left. Now there’s some potential. Oh yeah! I think I see a carton of frozen cool whip in the back of the freezer. And wait a minute. I remembered that we had some leftover apple pie filling in the fridge. Now we’re talking. Let’s make an apple pie sundae!
So I scooped the ice cream in some parfait glasses. Topped it with warm apple pie filling, caramel (I always have caramel topping in the fridge), pecans and what else? Crushed teddy grahams of course. Those poor little fellas didn’t have a chance. A spoon of cool whip and we’re ready. Even my husband got up from watching his Phillies game for this. As Rachael Ray says “It was YUM-O!” (I know, I know)
Apple Pie Sundaes
4 scoops vanilla ice cream
4 heaping spoons apple pie filling, heated
a few squeezes of caramel topping
a handful chopped salted pecans
1 package teddy grahams, crushed
1/2 cup whipped topping
Spoon ice cream into 2 bowls. Top with apple pie filling, caramel, pecans, teddy grahams and whipped topping. Makes 2 servings.
