A Late Night Sweet Snack

I am a terrible late night snacker. I can eat healthy all day and then have a sensible dinner but I always crave something sweet or salty at night. Yes, it is my downfall.

I started rummaging through the pantry after putting the kids to bed the other night. I could not find much. We did have some single serving packaged kids snacks. Let’s see…teddy grahams, granola bars, pudding. Nothing seemed that appealing. Now on to the freezer. A little vanilla ice cream was left. Now there’s some potential. Oh yeah! I think I see a carton of frozen cool whip in the back of the freezer. And wait a minute. I remembered that we had some leftover apple pie filling in the fridge. Now we’re talking. Let’s make an apple pie sundae!

So I scooped the ice cream in some parfait glasses. Topped it with warm apple pie filling, caramel (I always have caramel topping in the fridge), pecans and what else? Crushed teddy grahams of course. Those poor little fellas didn’t have a chance. A spoon of cool whip and we’re ready. Even my husband got up from watching his Phillies game for this. As Rachael Ray says “It was YUM-O!” (I know, I know)

Apple Pie Sundaes

4 scoops vanilla ice cream
4 heaping spoons apple pie filling, heated
a few squeezes of caramel topping
a handful chopped salted pecans
1 package teddy grahams, crushed
1/2 cup whipped topping

Spoon ice cream into 2 bowls. Top with apple pie filling, caramel, pecans, teddy grahams and whipped topping. Makes 2 servings.

Apple pie sundays sound delicious! I would have that as a midnight snack or anytime of the day, really. Poor garam cracker bears… 🙁

Lisa I chuckled when I read this post. I am just the same, I get my sweet/salty tooth later on after a full day of healthy eating…..I think it is because we work so hard that when night comes we want a good treat to sit and relax with. 🙂

This looks yummy I would love to eat some for a treat.

Hey, sounds great to me!! I’m more of a happy hour snacker. I usually brush my teeth soon after dinner so I don’t get the longing for the junk! Looks yummy though.

But seriously, your apple pie a la mode ice cream looks sweet. I’ve had something like that at cold stone creamery… and oh man it was delicious times a million.

What a perfect late night snack. I always have caramel on hand as well along with, what seems, and endless supply of teddy grahams! This dessert looks delicious.

Lisa,
The best time to eat for me is after 10 pm, I love food at night! (very bad for the waistline!) Though I mostly crave CHEESE! I always have a few hunks of whatever cheese is lying around, usually Jarlsberg, before bed. Why is that?

These look wonderful..I too struggle w/ late night snacking! I find that is I brew some decaf tea w/ some Slpenda and find that my munchies are not as bad! My jeans yell at me if I do too much late night snacking!

I’m with you there. I have a spoon all set and ready to dig in. I used to eat a lot of sweets before bed; I was really bad at it and eventually gave it up, but trust me when I say I know how you feel. Snack on!
