Another Quick Dinner

It’s been another crazy week with swimming , karate, class parties, movie night, so on and so on. I promised a few quick dinners this week and here is one of my new favorite low maintenance meals. I was blog hopping last week and found this great idea for fish sticks. Yes, I said fish sticks. I used to think of them as dull, boring and bland frozen food. With some corn tortillas, a little slaw and your favorite toppings, you can make fish tacos as good as your favorite take out. I happened to have some Trader Joe’s Cod Sticks and these worked fine. Gordons makes crunchy fish sticks and they would probably work better. Anyhow, thanks to Adventures of a Food Slut and Sweets by Sarah, I now have a new quick meal idea. Use your imagination of toppings and make some tacos. Gotta run to a swim team pasta party. Happy weekend!

Easy Fish Tacos
1 bag coleslaw mix
seasoned rice vinegar
fish sticks (2 per taco), baked
corn tortillas
assorted toppings such as sour cream, pico de gallo, chopped avocado, shredded cheese, cilantro or anything else you’d like on a fish taco

Mix the slaw with the vinegar to desired taste and set aside. Bake the fish sticks per the box’s instructions. Heat a small skillet over medium-high heat. Heat corn tortillas one at a time for about 20 seconds per side, until warm and pliable. Fold in half and remove to a plate while you continue to heat the rest. To assemble the tacos, place some slaw mix on each tortilla and then 2 fish sticks. Pile on your favorite toppings and enjoy.

We usually call them ‘fish fingers’ here in the UK, we eat them with a meal or sometimes with salad cream or mayo on a sandwich.

Great idea eating them with tortillas. 🙂

I couldn’t tell you how many years ago I ate my last fish stick… I just stopped eating them, but you know what I actually would like to have them in such a wrap!

I love the way you think. I have to cook on the fly somethimes too. What a great idea to use the fishsticks. We ate them plain the other day. Blah! So your way is much better.

No more for me, unfortunately. I decided to adopt a vegan diet, but I’m going to try making these with crunchy fried tofu sticks instead!

There was a time, when I was younger, that the ONLY food I would eat were fish sticks. Considering I wouldn’t eat “fish” until in my 40’s, I have no idea why fish sticks were so tasty!
