And the Winner is……

OPRAH! Yes, she was picked as the winner for the celebrity that you most would like to have over for dinner from my survey in May. I would love to have Oprah over for dinner. But right now she is on the 21 day cleanse. This means a pure vegan diet with no sugar, white flour or dairy products. And no alcohol. Oprah, maybe I’ll hold off. You can come over another week. In the meantime, I obtained a salad chart from Oprah’s magazine. If you click on the link, it is a nice chart that gives good salad ideas and ingredients which can be mixed and matched.

Speaking of salads, I made one for dinner tonight. It was another one of those evenings where there was swim practice and a school fun fair, leaving very little time for dinner. I happened to have some grilled chicken. I tossed that together with some mixed greens, peppers, tomatoes, black beans and feta. I made a lemon basil vinaigrette dressing earlier in the day which was good on the salad. This dressing would probably go very well with seafood. The kids had some chicken and cheese in tortillas and everyone was happy. It is now supposed to reach 100 degrees by Monday so the salad chart is looking fabulous!

Lemon Basil Vinaigrette
_________________
large handful of basil
1 large shallot, chopped
1/3 cup lemon juice
1/3 cup olive oil
1/3 cup canola oil
1 tsp Dijon mustard
1 tsp garlic powder
3/4 tsp sea salt
1 TBS sugar
fresh ground pepper to taste

Place all ingredients except pepper in a food processor or blender. Process until smooth. Season with black pepper to taste.

100 degrees! Wow!

I was the only one that voted Tom Brady?! Oh, come on. Who wouldn’t want to talk to him? Except I would be staring into his eyes the whole time, and probably couldn’t keep a conversation.

Great looking salad! And perfect for these hot, sticky days. We had the same temps in RI. It’s just too early for this stuff. ugh!
