A Token of Appreciation…..

Today was the last day of school for my children. It seems like everyone else finished days or weeks ago. Seriously, the backpacks and school supplies are already out for next year. So summer has finally begun!

With all our activities lately, I have been feeling like a chicken running around without a head. And yesterday I realized I still needed a few gifts for some special people that take care of my children. Let’s see…we have a school aide that runs all the lunch time clubs my daughter belongs to, two bus drivers and we can’t forget the school nurse. Our school nurse is the best ever. She cleans cuts, gives out ice packs, repairs children’s hurt feelings and even fixes shoes! So these gifts really need to be special. After some thinking, I decided to bake some mini muffins and put them in pretty mugs. Wrap them up with a Dunkin Donuts gift card and we are good to go.

I checked out some muffin recipes on various blogs and decided to incorporate some Lyle’s Golden Syrup and buttermilk that I had. These strawberry muffins are perfect for summer and the size was great to fit in a large mug. The kids enjoyed giving these as gifts. Happy summer everyone!

Golden Strawberry Orange Mini Muffins
(Adapted from Dorie Greenspan’s Orange Berry Muffins).

zest and juice from one orange
3/4 cup buttermilk
1 tsp vanilla extract
2 large eggs
1/4 cup golden syrup (I used Lyles Golden syrup)
1 stick (8 TBS) melted unsalted butter
1/4 cup sugar
2 cups all purpose flour
1/4 tsp salt
1/4 tsp baking soda
2 1/2 tsp baking powder
1 1/4 cup chopped strawberries

Preheat oven to 375 degrees. Line 36 mini muffin tins with paper or foil cups. Pour the orange juice and buttermilk in a medium size bowl. Reserve the zest. Whisk the vanilla, eggs, syrup, and butter with the buttermilk mixture. In a large bowl, mix together the zest and sugar until sugar is fragrant. Stir in the flour, salt, baking soda, and baking powder. Mix well. Pour the liquid ingredients into the dry ingredients and gently mix with a rubber spatula. Batter will be a bit lumpy. Stir in the strawberries. Divide the batter amongst the muffin cups. Bake for 15 to 19 minutes or until muffins are golden and springy to the touch. Cool for 5 minutes before removing from pan. Makes about 36 mini muffins.

Lisa, I love the idea…and the muffins!! I recently found a strawberry muffin recipe (when my kids and I went and picked 12 lbs of strawberries at the local patch!!!), but I like the orange in this one, will definately try it soon, my kids love muffins!

Cute idea! The muffins look so pretty. I know what you mean about those last few days of school being so crazy…it’s so nice when it’s all over and you can settle into summer. But that can be crazy too!

Those look wonderful and I love their golden title. I would have loved this when I was in el ed. I favored the consumables-especially the homemade ones!

What a great idea for a gift! I don’t think the muffins would have made it out of my house, let alone into someone’s gift! They look so yummy.

The muffins look delicious. I’m ALWAYS making muffins, so this will need to go in my file for a future recipe to prepare. What lucky recipients–you can’t go wrong with Dunkin Donuts coffee!

Yeah, the summer has been crazy also.

I always have a hard time with teacher gifts so I hope they like them too.
