The Day After…Cheesecake Hangover

Well here we are. It is the day after Mother’s Day and Eat What You Want Day. I thought I would be back on my healthy eating regime, however, there was still leftover cheesecake in the refrigerator. It was also one of those windy, cold, rainy days where you want to snuggle up in a blanket and read or watch a movie. And of course, you need some snacks with that.
I am the type of person that will not waste food so I had to eat a piece of cheesecake. Let me describe this dessert to you. Picture the creamiest cheesecake you ever had , topped with the lightest chocolate mousse, covered in bittersweet chocolate ganache, then sprinkled with white chocolate shavings. Typically, I am not a big cheesecake person but I have decided this is my favorite dessert. It was worth every bit of the thousands of calories it had.

With the miserable weather, I thought it was also a good day to make soup. I don’t have time to post the recipe right now but will do so tomorrow. I made soup with whatever ingredients I had on hand. It turned out to be quite tasty and healthy. It included a lot of vegetables that will balance out the cheesecake. So come back tomorrow for Mexican Chicken Vegetable Soup. Right now, this cheesecake stuffed mom is headed to bed. Good night!

Ohhhhhhhhhhhh! I totaly missed the “eat what you want day”! What a shame… Maybe next year… and if I can eat all I want, i would probably eat that cheesecake!
